Dad's Fudge Recipe
There's not much that is more fun than making this fudge with Dad himself....but if you can't get to his kitchen or can't get him to yours, here's the recipe. Thanks Dad!
Does everybody know what the softball stage is and how to determine it? Check it out here: http://www.exploratorium.edu/cooking/candy/video/softball.html
4 Cups Sugar
1 Large can evaporated milk (12 oz)
1 cup (2 sticks) margarine or butter (Butter is better)
12 oz. semi-sweet chocolate chips
1 pt. (approx) marshmallow cream
1 tsp vanilla
C Cup finely chopped nuts
Combine sugar, milk, butter (CUT BUTTER INTO SMALL PIECES ¼ X1/4 INCH.) in a 6 qt. pot with a heavy bottom.
Cook on high heat , stirring constantly. (Very important to keep stirring constantly.) until boiling reaches middle of pan. APPROXIMATELY 7 MINUTES 45 SECONDS to 8 MINUTES 15 SECONDS, at least at 5,000 feet. AFTER BOILING REACHES MIDDLE OF POT, the mixture should be at soft ball stage. Remove from heat, add chocolate chips and vanilla, stir in completely, the add marshmallow cream and stir in completely and finally add nuts and stir in completely. Pour hot fudge into a 9 X 12 Pyrex dish. It should set up within 2-3 minutes. If not you have probably made chocolate syrup.
